Chef Ace Tan of 1-V:U brings the heat with The Progressive Asian Journey pop-up series at Stellar @ 1-Altitude alongside chef Lamley Chua.
For the fourth chapter of its Progressive Asian Journey series, 1-V:U’s head chef Ace Tan teams up with long-time friend and chef, Lamley Chua, to showcase the native flavours of Southeast and Northeast Asia, through a pop-up which will run from 2 October to 4 December this year. Expect dishes inspired by the different prefectures of Japan, spiced up with ingredients from other parts of Asia like Thailand and Korea.
This time, Tan debuts two dinner menus, namely a five-course Embers of the East and an eight-course Playing with Fire, celebrating an aspect of cooking that is ever so essential but often forgotten—fire. Each menu is divided into four parts named after the different stages of fire: Ignite, Growth, Flash Point, and Smother.
From the Embers of the East menu, there’s Tan’s Gindara & Seaweed, a Nagasaki meets Thailand dish where black cod or sablefish goes with a lemongrass shoyu reduction and neem perilla oil.
And from the Playing with Fire menu, Tan’s Fishermen’s Sushi, is his take on ochazuke and Hakka thunder tea rice where kanpachi marinated in shoyu is paired with steamed Hakka jasmine tea. While Chua’s uses chocolate, yuzu cream and white miso to complement the richness of buttery foie gras in his Yuzu Foie Gras dish. Ask for a wine or sake pairing for a more indulgent experience.
