A Taste of the Gucci Osteria Da Massimo Bottura pop-up in Singapore

Highlights from the Gucci Osteria da Massimo Bottura pop-up in Singapore.

We recently had the privilege of experiencing Massimo Bottura (chef-owner of world no.1 restaurant Osteria Francescana)’s culinary brilliance at the Singapore edition of Gucci Osteria da Massimo Bottura, a 60-seater pop-up set up at The Arts House. Organised by culinary events company Savour, the venue for the five-week pop-up was picked to parallel the Palazzo della Mercanzia in Florence—both buildings are steeped in arts and culture.

Inside, the interiors, too, have been meticulously decorated and furnished to resemble the original Gucci Osteria in Florence—the walls are clad with the signature red Gucci Herbarium motif wallpaper while the crockery used are all from the Gucci Decor collection. On the food front, chef Massimo Bottura and chef Karime Lopez (the head chef of Gucci Osteria) have conceptualised a four-course menu for lunch ($128) and a seven-course menu for dinner ($278)—both feature a range of signature dishes that are inspired by Bottura and Lopez’s travels around the world.

Uni crab toastada

Our meal began with the uni crab toastada, inspired by chef Karime’s Latin American heritage, featuring a sweet crab salad, layered with briny, Hokkaido uni sauce, and topped with a crisp yellow corn tostado. The tortilla cracker is dressed with some avocado, pickled radish and dusted with coriander and hibiscus powder for an added flavour kick. Next, we had the much talked about Crunchy Part of the Lasagna, comprising a lasagna sheet that has been made crispy thin, and served atop a bed of scrumptious ragu and airy béchamel sauce. The pasta sheet is coloured red and white to represent the Singapore flag.

Holy cannoli

Meat lovers will enjoy the next course, Meet the Meat, consisting a cut of wagyu tenderloin that is cooked sous-vide and then roasted in ash (vegetable charcoal), and served on savoury beef jus. The accompanying celeriac and black garlic puree lends a lovely umami flavour to the dish, while the daikon sheet cuts through the meat’s savoury richness.

Taka bun

For desserts, there are two courses: a light and refreshing Strawberry Fields, composed of diced strawberry cubes tossed in a homemade lychee and vanilla marinade, tucked under a light lychee-flavoured meringue disc; followed by Charley Marley (named after chef Bottura’s son, Charlie who loves chocolate), an eye-catching dessert sandwich emblazoned with the Gucci logo and covered with gold dust. Bite into it and you’ll taste the rich flavours of dark chocolate ganache, hazelnut biscuit and kaya cream.

The Gucci Osteria pop-up is available for lunch ($128 for the four-course menu or $228 for the seven-course menu) and dinner ($278 for the seven-course menu) on select days till 2 June 2019.
