Brunching with Elegance at the St. Regis Singapore

With a menu that offers a mélange of classic and contemporary highlights created for any epicurean palate, Brasserie Les Saveurs is ready for the season of merrymaking.

The holidays have finally arrived, and what better way to celebrate than indulging and feasting. Regally decked out with high floor-to-ceiling windows, golden chandeliers and velvet carpets, Brasserie Les Saveurs at The St. Regis Singapore is a choice location for any occasion. Created by executive chef Thibault Chiumenti and his team, the menu has hints of his childhood memories of spending the festive season in France. Chiumenti hopes that it would invoke the same feelings of warmth and the familiarity of home in all his diners.

The moment the first dish, Plateau de Fruits de Mer—a seafood platter, was served, we were in for a luxurious culinary adventure. Atop a bed of ice cubes was a mountain of fresh Alaskan king crab legs, French oysters and jumbo shrimps.

Crab Meat Salad with Baerii Caviar

Embellished with gold leaves, the Crab Meat Salad with Baerii Caviar, a cold entrée, was the star of the meal. The crab meat was mixed with mayonnaise, chives and shallots for an aromatic salad. And to impart a distinctive umami taste to the dish, it is complemented with a generous serving of Baerii caviar sustainably sourced from the mountainous regions of China.

Smoked Salmon infused with The St. Regis Singapore Tea Blend

After featuring ingredients from France and China, a key ingredient of the next dish was sourced from the hotel itself: The St. Regis Singapore Tea Blend. Here, salmon is lightly smoked with TWG’s green and black tea blend, and its rich notes of white chocolate and the subtle flavours of white rose and jasmine cuts the mildly fishy taste associated with smoked salmon to create an extremely palatable delight.

The mains put the tastes of the land in the spotlight, and a standout was the Beef Wellington, where a chunky cut of tenderloin is coated in layers of mushrooms, spinach and herbs. The aesthetically pleasing latticed puff pastry crust it is wrapped in gives the dish the honour of being a centrepiece at the dinner table of any get-togethers you will host during this period.

Artisanal Panettone with Glühwein Nitrogen Ice Cream

Despite the filling meal, there will always be room for dessert—especially when it is served at the St. Regis. While we have to skip out on holidaying in Europe this year, Chiumenti brings the signature beverage of winter markets, mulled wine, to the hotel through his unique and performative interpretation of Glühwein Nitrogen Ice Cream that is made tableside, and served with Homemade Panettone.

Through enjoying dishes of such quality, along with all the meaningful and intimate conversations you will get to have with those near and dear to you, a meal at Brasserie Les Saveurs will certainly be the well-deserved icing on the cake to end off an otherwise challenging year.
