Chef Agustin Ferrando Balbi Goes Solo With Andō

Argentinian chef Agustin Ferrando Balbi opens his first restaurant in Hong Kong with the JIA Group

Chef Agustin Ferrando Balbi teams up with Yenn Wong from the Hong Kong-based hospitality firm, JIA Group, to open Andō.

Hailing from Argentina, Bali helmed contemporary Japanese restaurant, HAKU, in Hong Kong, where he earned the title of Best Young Talent of the World 2019 by La Liste and ranked 87th among the Best Chefs of the World 2019. Prior to that, he earned his chops working in various Michelin-starred establishments in Tokyo including Nihonryori Ryugin.

A union of Balbi’s roots and culinary ventures in Japan, the restaurant marries Spanish cuisine with Japanese sensibility. The restaurant’s name is derived from Balbi’s Latin surname Ferrando and carries dual meanings: in Spanish it means ‘-ing’, the verb participle describing the act of doing in the present and in Japanese signifies a sense of contentment.

Andō is located at 52 Wellington Street, 1F Somptrueux, Central, Hong Kong.
