Chef Gunther Hubrechsen’s eponymous dining room on Purvis Street is a stalwart of Singapore’s fine-dining scene. Guests start their dinner choosing from daily specials, presented as a platter of beautifully fresh ingredients tableside. For a big-hitting list of house favourites, head straight to the à la carte menu, where key dishes are labelled with the year Gunther first created them. Classic cold angel hair pasta and oscietra caviar (from 2005) is an elegant plate, while the smoked Alaskan king crab with a bonbon of 2017 Comté Millésimé pairs rich, velvety cheese and lightly smoked crabmeat to great effect.
