This is where you’d come to for classic Cantonese fare or quality dim sum. As one of the earliest Chinese fine dining restaurants in Singapore, Hua Ting Restaurant at Orchard Hotel holds the fort as one of the best Cantonese restaurants. The space is newly furbished, with elegant Chinese lattice panels and glittering chandeliers.
Hong Kong masterchef Lap Fai is in charge of doling out iconic dishes the likes of Smoked Peking Duck and the Hua Ting Signature Crispy Roasted Duck. The latter comes with a crisp, caramelised skin that keeps the meat within juicy and tender. Like the flamboyant plating fit for an emperor, dishes here are presented as works of art. The Baked Empress Chicken Drumstick, for example, comes in a bread bowl sculpted to resemble a hen containing baked chicken, abalone, and fungus.
You must, of course, get the tea to pair with the meal. Fai has personally picked the selection of brew—Dawn of Spring, Golden Rays of Summer, Quaint Colours of Autumn Foliage, or Warmth of Winter Glow—that friendly service attendants will happily recommend.
