Jiang-Nan Chun takes its name from Jiang Nan–the paradise-like region of southern China–and Chun, meaning the season of Spring. There is certainly much to find pleasurable on the refined Cantonese menu. Don’t miss the signature Peking duck, the highlight of any meal here. Roasted in a mesquite wood-fired oven, then skillfully carved at the table, the crispy skin is served with sugar before the meat is stripped and assembled into pancakes. All the usual accompaniments are provided, but the luxurious topping of caviar and the spring onion pancakes elevate Jiang-Nan Chun’s above others.
