Stellar service. Beautiful space. Excellent food. If there’s one place in Singapore that checks these boxes, it would be three-Michelin-starred Odette. Helmed by chef-owner Julien Royer, Odette is a translation of the French chef’s ingenuity. Royer pairs ingredients from both ends of the world with ease, such as Japanese sea urchin with Kristal caviar, or Nashi pear with brown crab from Normandy.
He also has plenty of fun with presentation. The crab course sits under a delicate blanket of green jelly, while the rosemary smoked egg arrives at the table in a cloud of dry ice smoke. The cheese and digestif trolley at the end is a classic French-style way to end the meal—indulge.
