Taking its cue from the Japanese omakase concept, head chef Fernando Arevalo plans his menu around a theme every year. For now, Preludio is guided by the idea of ‘Time’—this means dishes are expressed through the various aspects of time. Confit duck pasta, for instance, features French duck aged for three weeks. The tender wagyu dish transports you to Columbia with a special sauce of smoked cauliflower and piquillo chimichurri. Come if you enjoy dining with a story-telling element.
