Taking on a new look and name, the former Forlino welcomes executive chef Rémy Carmignani and his reimagining of Mediterranean cuisine. One dish, in particular, stands out. The marrakchia tangia, a traditional stew in Medina that is slow cooked in a clay pot at the hammam (bath house), is reminiscent of the chef’s time spent in Marrakesh and his European heritage. Enjoy it in the inspired form of housemade tortellini stuffed with braised lamb shoulder, seasoned with preserved lemons and an intense saffron and goat cheese cream.
