Helmed by chefs Richard van Oostenbrugge and Thomas Groot from acclaimed restaurant 212 in Amsterdam, this open kitchen restaurant promises a relaxed atmosphere as you make your way through a well-curated menu of five courses, tailored to coax your taste buds on a delectable journey.
Their starter of mackerel, cured in kombu salt, yoghurt and tarragon emulsion, is a playful variety of subtle umami flavours, accentuated by the tart tang of a tomato and strawberry broth. The barbecued lobster is kissed with a hint of smoke, served in a yellow wine infused with bacon that is, frankly, ingenious.
Mains such as the coral trout punch well above their weight, too. The fish boasts a deep flavour, springy texture and a lovely leek gravy. Also good is the A4 grade aged striploin, grilled on the binchōtan and accentuated with oxtail jus. A garnish of white clam oil and Chinese chives lends a little oriental flavour to the dish.
The apple dessert is a picture-perfect sweet treat that will surely impress those hungry for social media content. A core of Granny Smith apple sherbet is encased in a caramel sugar glass dome. It’s a work of art that looks and tastes divine, the perfect way to end a meal here.
