Takayama is an elegant kappo-style restaurant that celebrates the spirit of omotenashi, or wholehearted Japanese hospitality. Expect changing multi-course omakase menus as executive chef Taro Takayama curates every dish using seasonal ingredients, with great influence from Osaka, where his culinary career began.
Chef Takayama presents the Hokkaido corn, together with uni and ikura. Think a creamy mousse-like corn layer that is sweet and sophisticated, bursting with umami goodness when paired with the uni and ikura atop the main star. Indulge in a variety of fresh otsukuri that presents sliced fish with accompanying components. The seasonal bluefin tuna belly served with kombu shoyu, marinated egg yolk and wasabi is a true winner that melts in the mouth and leaves you wanting more.
A refreshing item is the foie gras monaka–Japanese rice cracker filled with creamy foie ice cream that is flavourful yet light on the palate, and made complete with seasonal fruits. Another favourite is the perfectly grilled Kagoshima wagyu that sits on a bed of bell peppers, served with fermented miso barley. Complete the exquisite journey with fresh fruits from Japan and homemade matcha confection.
