Dining at VUE is an excellent exemplification of dining with a view, with the restaurant overlooking Singapore’s spectacular city skyline and the scenic Marina Bay. Helmed by executive chef Sam Chin, the menu celebrates binchōtan-grilled specialties using seasonal produce. Service is attentive with a light touch, for an unforgettable dining experience.

Tuna tartare might seem like a simple dish, but it is elevated here with hand-chopped blue fin tuna, and served with scallops that sit pretty in a light green avocado cream and crème fraiche, topped with ikura and crispy seaweed filo pastry. The risotto with pan-seared foie gras also comes highly recommended, though not for the faint of heart. VUE uses Vialone nano rice for the risotto, a grain variety that is more starchy and can better soak up the simmering stock. The rice is cooked perfectly with a great bite and texture, to be indulged with the buttery and flavourful pan-seared foie gras, and occasional delightful crunch from the king oyster chips.

Main Dining Hall

For sweets, VUE’s take on the Basque burnt cheesecake will take your breath away. Using high-end fromage blanc (French creamy white cheese) and baked at up to 300°C, the cheesecake has a savoury soft cheesy core that is surrounded by a beautifully burnt and caramelised exterior. The creamy textures are enhanced by the accompanying almond crumbs and homemade berry jam that is bursting with sweet tangy freshness.
